Liberica Purple Honey Kendal

This Liberica is processed using a Honey method combined with a controlled hybrid fermentation approach. Fully ripe purple cherries undergo an initial wet fermentation with water and a triple-yeast inoculation for 120 hours.

After fermentation, the cherries are pulped while retaining a high percentage of mucilage, characteristic of the Purple Honey style. The parchment is then reintroduced into the mosto from the first fermentation stage. A second wet fermentation follows for 96 hours, with a renewed triple-yeast inoculation, including a yeast strain commonly used in beer brewing.

Drying is conducted under direct sunlight using a slow, controlled drying method to preserve the coffee's tactile structure and complexity, until the target moisture content is achieved.
