A Bright and Lively Cup

‘Sesongot’ is the name of a beautiful caterpillar
native to Gayo, often found hanging from coffee
trees. Aulia Kahfi named his experimental and
specially processed coffees after the creature because
of its unique appearance. For this natural lot, the
cherries are soaked in clean water for two days
before drying on patios for 12–15 days, with frequent
raking to ensure even drying. The result is a clean,
well-balanced coffee with notes of hazelnut, stone
fruit and honeysuckle.
